Maple Dark Chocolate Eggplant Bread


2 cups eggplant, grated or finely diced (about 1 medium eggplant) 2 cups flour 2 large eggs 1/2 cup maple syrup 1/3 cup safflower oil 1/2 cup walnuts, chopped 3/4 cup dark chocolate, chopped


Preheat oven to 350 degrees. Mix all ingredients. Transfer to a greased loaf pan. Bake for 80-90 minutes, or until knife comes out clean.
