1 head radicchio.
good quality olive oil
fresh mild goat cheese
Cut radicchio in half length wise, douse generously with olive oil.
Cut baguette in half length wise, also drizzle with olive oil.
Place radicchio cut side down on a hot grill- grill for 8- 12 mins on medium heat, turn and grill a few mins more on other side.
Add bread cut side down to grill, 2-3 mins.
Spread soft goat cheese on hot baguette, top with grilled radicchio leaves, sprinkle with coarse salt and a little more olive oil if needed.
