The summer crops are winding down on the farm. It's a bit of an emotional challenge to remove them when there is still fruit waiting to flourish on the plants. We always find a number of ways to enjoy the tanginess of green tomatoes. Here's one of our favorites.

1 Small Lime - Juiced 1-2 Tb
1 Finely Chopped Garlic Clove
Salt & Pepper to taste
1 Clove of Fresh Garlic or a Pinch Garlic Powder
Pinch Chili Powder
2 Tbsp Chopped Parsley
1 Tb Chopped Fresh Cilantro (optional)
1/4 Cup Finely Chopped Onion * about ½ small onion
2 Tb Finely Chopped Jalapeno about ½ small pepper
1½ Cups Chopped Green Tomatoes about 2 tomatoes
Remove the stems and cores of the green tomatoes.
Chop all the ingredients and combine.
Refrigerate for at least 1 hour before serving. Best if it sits for a day before serving.
